Greek Chopped Salad

Prep time: 15 minutes, Chill: 1 hour, Serves 4

Ingredients: Vinaigrette
5 tbsp Wild Oats Organic Extra Virgin Olive Oil
3 Tbsp Balsamic Vinegar
1 tsp oregano
1 tsp mint
1 garlic clove, minced
1 tsp Wild Oats Organic Dijon Mustard

Instructions: Whisk dressing ingredients together. Set aside.

 

Ingredients: Salad

6 cups Romaine lettuce, chopped
1 can Wild Oats Organic Garbanzo Beans, drained and rinsed
15 Kalamata Olives, chopped
5 or 6 artichoke hearts, chopped
2 cucumbers, peeled and sliced
2 roasted peppers, chopped
1/2 cup red onion, thinly sliced
1/2 cup feta cheese, crumbled or cut into chunks

Instructions: Toss all the ingredients together. Drizzle with vinaigrette. Chill for an hour before serving.
