Healthy Breakfast Burrito

Ingredients

  • 1 Whole wheat or grain or corn tortilla
  • 2 Large Cage-Free Eggs, or 3 egg whites, slightly beaten
  • Dash of cumin and chili powder
  • 1 Tbls  chopped green onion
  • Any additional seasonal vegetables chopped you would like to add
Instructions: Pour eggs in a pan lightly sprayed with non-stick cooking spray. Add onions, spices and salsa (any additional veggies); stir. Cook eggs until firm. Heat tortilla in microwave or in a dry skillet. Roll eggs in heated tortilla and enjoy! Prepare the night before and wrap in wax paper or foil for an easy, grab-n-go breakfast.
